Chocolate Chip Mint Smoothie
1-2 frozen bananas
a few stevia leaves
a couple of handfuls of lettuce (or spinach)
several mint leaves (I have a chocolate mint plant and I use about 10 leaves)
1-2 cups milk or milk substitute
1 handful dark chocolate chips
As is probably obvious from the recipe I don’t tend to measure things for smoothies. I just throw everything into the blender and turn it on and add more milk if it won’t blend.

Peanut Butter Oat No-Bake Cookies
1/2 cup honey
6 Tbsp cocoa
3 Tbsp butter
1/2 cup milk
1/2 cup peanut butter
1 tsp vanilla
1/2 tsp salt
3 cups oats
Place honey, cocoa, butter and milk in a saucepan over med-low heat. Bring to a boil stirring constantly. Boil for 2 minutes then remove from heat. Add the peanut butter and stir until smooth. Stir in the remaining ingredients. Drop by teaspoonful onto parchment covered cookie sheet. Allow to cool.


Banana Muffins (egg-free, dairy-free, nut-free, gluten-free, sugar-free)
2 1/4 cups oat flour
3/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
3 ripe bananas (mashed)
1/3 cup apple sauce
1/4 cup honey
2 Tbsp flax soaked in 5 Tbsp warm water (5 mins)
1/4 cup oil
1 tsp vanilla
Preheat oven to 350F. Sift together dry ingredients. Mix together last six ingredients and add them to the dry ingredients. Stir until mixed. Place in greased muffin tin. Bake for 13-16 minutes or until a toothpick inserted into the center comes out clean.
Loaf -bake for 40-50 minutes
use whole wheat flour or whole oats instead of oat flour
use peanut or other nut butter instead of oil
add chocolate chips (Enjoy Life makes dairy free chocolate chips)

Homemade Electrolyte Replacements
1 qrt water
1/2 tsp baking soda
1/2 tsp salt
5 Tbsp honey or maple syrup
1 cup pure fruit juice
1 cup green tea or water
pinch organic sea salt
